    FISH CEVICHE

    A poised, Latin-inspired plate that honours the natural sweetness of line-caught white fish, gently cured in vibrant leche de tigre. The citrus carries a clean, saline snap that lifts the fish, while jalapeño offers a measured warmth that lingers without overwhelming. Paperthin garden radish adds peppery crunch; ripe avocado supplies cool, buttery richness; and golden banana chips bring a playful, delicate bite. A scatter of edible blossoms finishes the dish with quiet theatre, underscoring its freshness and finesse. At Rivet & Rebar this ceviche is conceived for clarity: luminous, balanced, and bracingly refreshing, with each element tuned to let the fish sing. Sea salt and lime perfume the air.

    Beverage companion: The Coral Cocktail offers a bright, refreshing pairing. It is a crisp blend of Martini Bianco, Tanqueray Gin, fresh green grapes and house-made citrus juice that mirrors the ceviche’s zesty character. It complements the sharpness of leche de tigre and the gentle heat of jalapeño.
