Transporting food long distances to our plates will become a thing of the past. That’s why this Hybrid Grouper dish caught our eye! The sustainable grouper is farmed here on the island and has reached new levels of quality and excellence. Wrapped in carrot and scallop mousse, whilst delicately cooked with an earthy carrot puree & citrus butter sauce, the preparation of this dish brings out the delicacy of this amazing fish and adds contemporary cooking techniques to a new, local, cuisine.
Beverage companion: Paresa has an excellent wine list for fish. The dry, crisp Domaine Vacheron Sancerre Blanc (2021) from France stood out. Concentrated gooseberry fruit flavours, balanced by a rich smokiness, pairs nicely.
