    Tambu Phuket recasts Kolkata’s beloved street snack, Jhal Muri, as a signature. The classic medley of puffed rice, spices and tangy chutneys is freshly assembled at the table, the theatre essential to its charm. Puffed rice is tossed with green chillies, onions and a house blend of spices, then folded with creamy avocado and a delicate veil of avocado snow, lending cool richness to the lively heat. The textures are impeccably layered: crisp, nutty and bright, while the seasoning keeps everything taut and fragrant. It remains true to its pavement origins yet feels unapologetically modern, an engaging, hands-on course that turns a humble favourite into a polished mouthful to savour.

    Beverage companion: Champagne De Sousa: a crisp, citrus-driven grower sparking with fine bubbles that refreshes the palate and balances the spice, making it a playful and elegant match to the tangy crunch of Jhal Muri.
