MOROCCAN CHICKEN TAGINE
Firefly’s signature Moroccan chicken tagine is a slow-cooked study in fragrance and restraint. Chicken is gently braised with saffron, ginger and turmeric, the pot’s conical lid trapping steam so the meat bastes in its own juices. Dried apricots melt into the sauce, lending delicate sweetness, while toasted almonds add pleasing crunch. Fresh coriander lifts the aromatics; preserved lemon brings a clean, saline brightness that cuts through the richness. The result is chicken of remarkable tenderness, saturated with spice yet impeccably balanced. It arrives with light, fluffy couscous scented with preserved lemon and, at times, dotted with fruit or nuts; a vivid, textural counterpoint that completes this timeless dish.

Beverage companion: Feudi del Pisciotto Valentino IGT 2018, a Merlot from Italy, flatters the tagine’s sweet-savoury profile: ripe plum and cherry echo apricots, supple tannins respect delicate chicken, gentle spice and oak harmonise aromatics, while poised acidity refreshes the couscous.
