The duck used in this dish undergoes two weeks of ageing, and the results are nothing short of amazing. As it matures, the duck undergoes a captivating transformation. It may shrink in size, but the flavours intensify and concentrate. The meat is chargrilled with 5 spice and served with dark chocolate & truffle, berries, cabbage, Rillette, and beetroot with a hint of balsamic. This sophisticated dish is worth the 14-day wait!
