Part of our series of fine dining on a stick this traditional Greek dish of skewered meat or seafood is available in equally succulent options of beef or shrimp at Kata Rocks; given the resort’s magnificent oceanfront location it seems appropriate to feature Executive Chef Laia Pons’ shrimp version here. Fresh-from-the-Sea shrimps are drenched in a marinade of lime juice, coriander, olive oil, chopped garlic and seasoning for 30 minutes, skewered on individual lemongrass stalks, then grilled quickly and carefully to lock in the luscious taste that’s a perfect blend of meaty shrimp and tangy marinade, all wonderfully offset by the yoghourt-based Tzatziki sauce.
Wine Companion: Sitting here on the gorgeous terrace with views second-to-none, it’s not too difficult to match the right wine to this dish. My choice is Sacha Lichine’s Whispering Angel from Provence. This rosé ticks all the boxes and will pair well with Executive Chef Laia’s dish.
