    Central Phuket Floresta – Basement Floor

    Su Va Na, the only underwater restaurant in Thailand, sets a languid, tropical stage for its Mala Chawanmushi, a poised collision of Japanese silkiness and Franco – Thai indulgence. The custard is infused with freerange Barbary duck, tremulous and savoury sweet, then glossed with a concentrated mala jus that deepens the game notes without overwhelming their delicacy. Beside it, a toasted brioche and Mango Chutney Sandwich brings buttery warmth and sunlit acidity, its edges crisp enough to dip through the satin surface. The composition feels both modern and timeless: flavours clean, textures impeccably judged, the portions restrained yet generous in intent.

    Beverage companion: Cool-climate 2021 Spätburgunder JS Pinot offers vivid red cherry, fine-grained tannins and brisk acidity; it echoes the duck’s delicacy, tames the mala tingling heat, and lifts mango chutney’s sweetness
